Meaghan's Vitality Balls

These Vitality Balls are full of protein, good fats including omega 3's, calcium, magnesium, zinc, Vitamin B's and Vitamin E. Think of them as superfood snack, a sweet treat with almonds to help keep sugar levels balanced, walnuts to help reduce heart disease and hemp seeds to support your hormones. 

Enjoy in moderation outside of the Course in Lifelong Vitality.

Ingredients

Dry Ingredients                                                     

  • 2 cups almonds
  • 2 cups walnuts
  • ½ cup mejool dates
  • ½ cup linseeds
  • ½ cup sunflower seeds
  • ½ cup chia or hemp seeds
  • ½ cup raw cocoa

Liquid Ingredients

  • 1 tbls good quality vanilla
  • 2 tbls coconut syrup
  • 2 tbls coconut oil or MCT oil
  • 2 tbls water

Instructions

1.Blend all dry ingredients together on high till almost smooth (it's nice to have some texture).

2. Add liquid ingredients and blend again, add more water if necessary (they should be quite sticky). 

3. Roll into balls and then roll in coconut if you like. When I'm in a hurry, I simply line a small baking tray with baking paper and press the mixture into it. Pop in the fridge for an hour then cut into small squares. It takes just as yummy and you have saved yourself 15 minutes.
