Meaghan’s Gut Friendly Green Frittata

PREP TIME: 15 mins COOKING TIME: 35 mins SERVES: 4 people

Introduction

This super simple Frittata is a delicious lunch on the Gut Health Protocol and can help you be prepared for the week as it will last over a few days. Just make sure your serving is the portion of 2 eggs. Enjoy with a green salad. 

Ingredients

  • 2 leek, sliced
  • 2 teaspoon olive oil
  • 4 zucchinis, sliced
  • 8 shallots, sliced finely
  • 200 g spinach, washed and chopped
  • 1 lemon
  • 4 tablespoons parsley, chopped
  • 8 free-range eggs, whisked
  • Sea salt and black pepper
  • 6 Tablespoons pine nuts

Directions

1. Preheat your oven to 180 C (350 F).

2. Saute the leek in a large pan with 2 teaspoons olive oil over a low - medium heat until soft.

3. Add the zucchini followed by the shallots and cook for another few minutes. 

4. Add the spinach till it just wilts.

5. Throw in the parsley and remove it from the heat. 

6. Transfer vegetables to a baking dish.

7. Whisk eggs then add lemon juice and a little salt and pepper.

8. Pour over the egg mixture and stir through the vegetables gently.

9. Sprinkle pinenuts on top, then pop into the hot oven.

10. Cook for 35 minutes or until set and golden.

11. Serve warm or cold. Enjoy!
