Lemon Pepper Marinated Chicken - Bio-Alai Friendly

This super duper easy recipe is so very delicious (I'm slightly addicted), and can be your go to chicken recipe while you're on the Bio-Alai Protocol, or when you're just choosing to eat clean. It's best marinated as the lemon softens the chicken, however, if you don't have time, I have made it without marinating and it's still tasty - just use less lemon and oil as the chicken won't have time to absorb them. You can always batch prepared the chicken and freeze the raw marinated chicken in serving sizes.  

The Urban Forager stock is the winning ingredient here and it's worth sourcing from your health food store. I love it because it only has vegetables and salt - NOTHING else. You can make the recipe without the stock, it's a lemon pepper flavour, however the stock adds a savoury depth that should be tried! 

Who doesn't love warm chicken in a salad and here is your new tasty way to create a warm chicken salad for you, your family and it's even entertainment worthy. 

BIO-ALAI FRIENDLY - Therapeutic Stage

Prep Time: 5 mins, plus marinating

Cook Time: 10 mins

Serves:  3 to 4

Ingredients

  • 1/2 kilo of organic or free-range chicken thighs, breasts or tenderloins (I've also used drumsticks)
  • Half a lemon, squeezed
  • 2 Tablespoons of cold pressed extra virgin olive oil. One for marinade and an extra one for sauteing. Extra oil is not required if baking.
  • 1 Teaspoon Urban Forager vegetable stock or Urban Forager FODMAP vegetable stock (optional)
  • Lots of freshly ground pepper
  • Half teaspoon of salt (when not using stock)

Directions 

  1. If using thighs or breasts, remove excess fat and cut to long thick strips
  2. Mix marinade together and add to chicken
  3. Marinate for up to 24hours
  4. Heat 1 tablespoon oil in pan on medium heat. Sauté gently for approximately 10 minutes until golden and cooked (internal temp 75 degrees), or bake in a 180 degree oven for approx 20 mins till cooked.

Viola, your new favourite simple lunch recipe - just add salad.
