Gut Healing Savoury Mince

Thanks so much to Jo from Quirky cooking for creating this delicious gut healing Savoury Mince. I've adjusted the ingredients slightly to give it a Meaghan twist. Use whatever veggies you have on hand and be sure to make extra to freeze. I've served mine with an egg on top and a smattering of my Sicilian chillies. (I will share the recipe soon, they are easy and delicious). *Gut Health Protocol modifications below
 
 

Ingredients

  • 2 tpsn ghee
  • 3 onions, roughly chopped
  • 3 garlic cloves, finely chopped
  • 3 celery stalks with leaves, finely sliced
  • 1 kg grass-feed beef mince (you can also use chicken, turkey or lamb mince)
  • 500 ml (2 cups) home made chicken stock (see my blog)
  • 2 tbspn fresh or dried thyme, rosemary or oregano (or whatever herbs you have on hand, not a dried blend)
  • 2 bay leaves
  • 450 g carrots, diced
  • 150 g mushrooms sliced
  • 400 g zucchini, diced
  • 150 g pumpkin chopped
  • 170 g (1 cup) frozen peas
  • 2 tsp fine sea salt, to taste
  • 1 tsp fresh ground black pepper, to taste (I made mine quite peppery and was a great flavouring and good for your gut)

Directions

  1. Heat ghee in a 4-6L heavy-based saucepan over medium-high heat, then add onion, garlic and celery. Sauté for 5 minutes, or until softened.
  2. Add mince and break up with a wooden spoon, Stir and sauté for 5 minutes, or until no longer pink
  3. Add stock, herbs, carrot, pumpkin and mushroom and stir through. Cover and simmer for 15 minutes on medium-low heat.
  4. Add zucchini, peas, salt and pepper. Stir through and simmer, uncover, over medium-high heat for 15-20 minutes, stirring occasionally, until vegetables are soft and stock has reduced completely.
  5. Serve hot, or cool and freeze.

 

*Medical Grade Gut Health Protocol 

If you're on the Gut Healing Protocol it will makes ten servings. Do not serve with egg or chillies.

Stage one 

Swap ghee for olive oil, and remove pumpkin and peas.

Stage Two

Swap ghee for olive oil, only use peas if you do not have menopausal symptoms. If you are not using peas increase portion of pumpkin.

Immune Modification 

Stage one 

Swap ghee for olive oil, and remove pumpkin and peas. Chop meat up finely rather than use mince as mincing meat increased histamines. Use vegetable stock as chicken stock can be higher in histamines.

Stage Two

Swap ghee for olive oil. Slowly introduce peas to see if you have a  sensitivity to them. Chop meat up finely rather than use mince as mincing meat increased histamines.
