Gut-Friendly Turkey Mince Breakfast Patties

These patties are ideal if you have food sensitivities and struggle to find something for breakfast that makes you feel good and satiated till lunch. They are equally as good for lunch, or dinner :) *We often serve them for breakfast on the Bio-Alai Health System Gut Protocol. Use whatever veggies are in your fridge (just ensure they are appropriate to your modification and stage of protocol). There is no limit to the quantity of additional vegetables to add, just ensure you can still press into patties that will hold together.

Makes 10 Patties, serving size 2

Ingredients

  • 2 tbsp olive or coconut oil
  • 500gm Turkey Mince** (you can also use chicken, lamb or beef mince,*** or broken-up fish pieces)****

  • 2 cloves garlic

  • 2 cm piece of ginger

  • 1 small onion or 2 spring onions

  • 1 carrot

  • 1 zucchini

  • 1/2 cup mushrooms / capsicum / cauliflower / broccoli*****
  • 2 cups mashed pumpkin ******
  • 2 tbsp fresh parsley or other herb / spice

  • Sea salt and pepper to taste

 

Directions

  1. Heat oven to 180 degrees C
  2. Place turkey mince in a large bowl.
  3. Using a chopper, Thermomix or grater, process all vegetables and herbs so they are nice and small.
  4. Add mashed pumpkin if using.
  5. Season with salt and pepper, and spices if using.
  6. Mix them together and make 10 patties, about 75 gm each.
  7. Place on a tray lined with baking paper and into the fridge for at least an hour. This helps the patties stay together. If you don’t want to cook all the patties immediately, freeze them separated by baking paper. (Remove from the freezer as needed, allowing time to thaw.)
  8. When oven is hot, brush patties with oil and cook for 30 minutes, turning onece and reapplying oil. You can also plan-fry on medium heat.
  9. Spread with avocado (for fats) and serve with extra veggies, or on their own if you are on the go.

** Check to see if your Personalised Plan allows mince in the first 6 weeks or do you need to finely chop meat finely as mince releases histamines

*** Serve red meat twice per week max on all Gut Health Protocols to maximise detox pathways

****** In phase 2 of the Protocol, add 2 ½ cups of pumpkin (grated or mashed) or peas to patties as mixing as make as normal.
