Cauliflower Rice

- 1 large head cauliflower
- 1 tablespoon olive oil
Directions
- Wash and thoroughly dry cauliflower, then remove all the greens leaves.
- Cut into medium pieces and use the grater attachment on a food processor or speed 5 for 3 seconds then pulse till you are happy with rice grain size consistency.
- Once you have your cauliflower rice, it's easy to cook, or enjoy it raw. Heat oil in a large fry pan over medium heat and sauté cauliflower rice, stirring regularly till it becomes tender, usually 5-8 minutes.
- Season with sea salt and pepper.
- Use cauliflower rice in recipes that call for rice, such as stir fries or fried rice! Store leftovers in the refrigerator up to 5 days. Store uncooked cauliflower rice in the freezer up to 1 month.
Note: Cauliflower is a non starchy vegetable so remember include a healthy carbohydrate elsewhere in your meal to stay balanced.
