Cannelloni Bean Dip

Ingredients

  • 1 1/2 cups cooked cannellini beans (drained and rinsed). If you soak and cook your own rather than using canned beans, it will take this dip to the next level.
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 large garlic clove
  • 1/2 teaspoon sea salt
  • freshly ground black pepper
  • 2 tablespoons water (if needed)
  • 2 tablespoons fresh rosemary leaves

Directions

  1. In a blender or thermomix, pulse the cannellini beans, olive oil, lemon juice and zest, garlic, salt, and pepper until combined.
  2. With the blender running, slowly add the water, if needed, and process until smooth.
  3. Blend in the fresh rosemary.
  4. Serve with veggies sticks.
