Bio-Alai Loaded Sweet Potatoes - Bio-Alai Friendly

When you feel like something a bit special for breakfast on the Bio-Alai Protocol this is it! Dr Agnes has given an easy microwave method, however I would use 1/2 a left over sweet potato from last night's dinner and lightly pan fry it. If you can't have eggs in the first stage of the protocol then substitute it with some Gut-Healing Savoury Mince. YUM!

BIO-ALAI FRIENDLY - Therapeutic Stage

Prep Time: 10 mins

Cook Time: 10 mins

Serves:  1

Ingredients

  • 1 medium sweet potato (about 1/2 cup)
  • 2 Eggs (poached or no-oil pay fry)
  • 1 cup spinach, kale or other leafy greens
  • 1 tbsp olive oil
  • 1⁄4 mashed avocado
  • Chives, sea salt and pepper to taste

Directions 

  1. Using a knife, poke the sweet potato multiple times and then place on a microwave-safe plate.
  2. Cook in the microwave for 3-4 minutes or until tender.
  3. Remove and let cool for 2 minutes before cutting in half long ways.
  4. Heat olive oil in a frying pan and cook the spinach or kale until wilted.
  5. Top sweet potato halves with spinach, avocado, poached eggs or protein.
  6. Top with chives, salt and pepper to taste.

For Savoury or Tofu Mince

You can swap the eggs for 1 serving of tofu or beef mince cooked to your liking.

For no-oil pan-“fried” eggs

Heat a small frying pan until hot, add a small amount of boiled water (to fill about 1cm) and bring to the boil again. Break two eggs into the pan and cover with lid until cooked to your preference. Use a spatula with holes to drain the water while removing the eggs.
